Omega six is important because it helps to create inflammation within our body, and this is important for body's defense mechanism. The problem is these days is far too much Omega six in our diets and therefore a lot of people suffering from chronic inflammation which can cause a host of illnesses ranging from arthritis to heart attacks and strokes. Omega six is very common in oil such as sunflower, canola and corn and because these are so heavily used in food preparation and cooking now that over the past hundred years or so we have gone from having a healthy seven grams a day of Omega 6 to 18 grams a day, and at the same time seen the illnesses mentioned double.
