The cheese-producing industry has in its production cycle to generate a product very rich in protein and lactose, called cheese whey. The waste currently has some food applications, but that does not add value to the real nutritional content and economical product that leverages. In order, therefore, a greater appreciation of cheese whey, studies were conducted for the recovery of proteins and the catalytic conversion of lactose into a polyol of high economic value, called lactitol. The results showed high removal efficiency of proteins in the order of 93% and the conversion of commercial lactose around 90% in 150 minutes of reaction. The applicability of whey, however, requires further testing to remove the chloride ions present in serum.Downloads
