Abstract

Aiming the use of an industrial by-product and contribute to reduce the environmental pollution, the goal of this work was to obtain whey protein hydrolysates with high di-tripeptide contents. Pancreatin was used and different hydrolytic conditions were tested. The effect of parameters such as hydrolysis time (5, 10 and 15 h), enzyme:substrate ratio (E:S) (1:100, 2:100 and 4:100) and raw matter concentration (MC) (10 % and 15 %) were tested. The peptide profiles were characterized firstly using a fractionation method by a size-exclusion-HPLC followed by a rapid Correct Fraction Area method for quantifying the peptides. The action of pancreatin produced different peptide profiles depending on the hydrolysis parameters used and the beneficial effect was observed in nine cases, and it was mainly associated with high amount of di-tripeptides (12,11 %, in average) and free amino acids (49,06 %, in average), when compared with a commercial whey protein hydrolysate.
